Physicochemical properties: white powder. Pullulan is used for maltotriose α- 1.6 bond linked polysaccharides. Tasteless and odorless. It is easily soluble in water and dimethylformamide, does not produce gelation, and the solution is viscous, stable and neutral. Insoluble in alcohol, ether and oil. The viscosity of the solution is the same as that of Arabic gum, which has excellent thickening effect of salt resistance, enzyme resistance, heat resistance and pH change resistance. It has strong film forming property. The film formed after its aqueous solution is dried on the metal plate has strong gas resistance to oxygen and nitrogen. Easy to form water-soluble edible film. It has good compatibility with other water-soluble polymers
Purpose: biochemical research. Thickener, stabilizer, coating agent, quality improver. It is usually used with carrageenan, sophora bean gum, etc., with the dosage of 0.15% - 0.5%
